  • Rotel
    1 can
  • butter
    1 stick
  • carrots
    3/4 c
  • celery (chopped)
    4-5 stalks
  • chicken (about 4 diced chicken breasts)
  • chicken broth (about 4 cups)
    3 cans
  • chili powder
    1/2 tbsp
  • cumin
    2 tsp
  • flour
    1/2 c
  • garlic powder
    1/2 tbsp
  • lemon pepper
    2 tsp
  • onion (chopped)
    1
  • water
    2.75 c

  • Dutch oven

    Melt butter in Dutch oven and sauté onion , carrots , and celery .
    butter: 1 stick, onion: 1 (chopped), carrots: 3/4 c, celery: 4-5 stalks (chopped)

    Stir in flour , cumin , lemon pepper , garlic powder , and chili powder .
    flour: 1/2 c, cumin: 2 tsp, lemon pepper: 2 tsp, garlic powder: 1/2 tbsp, chili powder: 1/2 tbsp

    Add chicken broth , water , chicken , and Rotel .
    chicken broth: 3 cans (about 4 cups), water: 2.75 c, chicken (about 4 diced chicken breasts), Rotel: 1 can

    Stir occasionally over medium heat.

    Bring to a boil and reduce heat. Let simmer for ⏱️ 30-40 minutes or until carrots and celery are tender and broth is thickened.

    Options: Serve topped with grated cheddar cheese and spoon of sour cream if desired. Squeeze a bit of lime juice into it when it’s done. Add cut avocado while serving. Add an additional can of diced green chilies. Add a can of corn.
